Nick is a derivatives and commodities specialist with more than 30 years’ experience across agricultural markets. With deep expertise in options and OTC products, he works with agribusinesses to strengthen risk management frameworks and make more confident commercial decisions in volatile markets.
Nick studied Agricultural Business at the University of Sydney and combines practical agricultural insight with global trading experience. His career spans physical grain and oil seed trading, leading ANZ’s Asian agricultural desk in Singapore, trading commodity index exposure at Goldman Sachs in Singapore and New York.
As CEO of Lachstock Consulting since 2019, Nick partners with agricultural corporates to improve market understanding, enhance hedging strategy, and support sustainable, profitable growth.
LACHIE STEVENS
EXECUTIVE DIRECTOR
With over 25 years in the grain industry, Lachie is a recognised expert in strategic growth and market analysis. He helps agribusinesses identify vulnerabilities and drive profitability through tailored risk management and derivative strategies.
Lachie holds a Bachelor of Agricultural Science from the University of Melbourne, a Diploma in Risk Management from Monash University, and an Advanced Diploma in Applied Finance and Investment from the Securities Institute. His career spans seven years at Louis Dreyfus, where he worked across analysis, risk management, and trading in canola, wool, and sorghum, later leading procurement and serving as Oilseeds Trading Manager.
In 2007, Lachie founded Lachstock Consulting. Today, he focuses on expanding the firm’s international footprint, shaping strategic direction, and leading the development of Lachstock’s research platform alongside the executive team.

With over 25 years’ experience in commodity and dry bulk freight trading, Matt combines deep market knowledge with expertise in supply chain management and risk mitigation across Australia and the Asia–Pacific. He has a proven track record in driving trading performance and optimising logistics, spanning 10 years in grain and protein meal trading and 15 years in dry bulk freight.
Matt began his career in marketing and risk at Twynam Pastoral Group before joining Cargill Australia, trading agricultural commodities and later leading Cargill’s Ocean Transportation Dry Bulk Freight desks across Asia–Pacific. Returning to Australia in 2019, he served as Head of Swire Bulk Australia, overseeing operations across Australia, New Zealand, and the Pacific Islands.
Now based in Brisbane, Matt partners with Lachstock clients to identify and manage the risks inherent in trading and transporting dry bulk commodities, helping businesses navigate complex markets with confidence.
ANNA WELLS
SENIOR COMMODITY ADVISOR
NORTHERN REGION
Anna provides tailored, forward-thinking advice to clients across the grain and cotton industries, drawing on deep knowledge of Northern Australia’s unique farming conditions. Her agronomy background and hands-on experience give her exceptional insight into the Queensland and Northern NSW markets.
Anna began her career as an agronomist before completing a degree in Agricultural Commerce at the University of Sydney and advanced financial markets training. She has held senior roles at Queensland Cotton, Monsanto, and Louis Dreyfus, leading marketing, business management, and accumulation strategies.
Since 2012, Anna has been Principal Advisor at Lachstock Consulting, supporting producers and consumers with market insight, risk management, and strategy, while focusing on business development and engagement across Northern grain and cotton markets.
LACHY HERBERT

With over 20 years in the grain industry, Lachy brings end-to-end supply chain expertise, from accumulation and oilseed processing to the export of finished products. His experience across domestic and international markets allows him to identify opportunities and deliver strategic value for clients.
Lachy holds a Bachelor of Agriculture from the University of Melbourne and spent a decade at Cargill Australia in trading and leadership roles. In 2015, he joined Riverina Oils & BioEnergy in Wagga Wagga, helping develop trading and risk management capabilities during a key growth phase.
Now based in Wagga, Lachy combines advisory work with managing a mixed farming operation alongside his family.
JOE REYNOLDS
SENIOR COMMODITY ADVISOR
CENTRAL REGION
Joe brings expertise in grain accumulation and regional crop forecasting, helping clients identify market opportunities and develop tailored strategies. His focus spans the supply chain, improving operational efficiency to support trading objectives.
Joe holds a degree in Agribusiness from Charles Sturt University and began his career at GrainCorp, progressing from Grain Merchant to Regional Planner. In 2019, he joined Lachstock Consulting as Senior Advisor for the Central region, working closely with clients to enhance supply chain performance and strategic decision-making.
DOUGAL GRIEVE
TRADING SUPPORT ANALYST
Dougal brings strong communication, problem-solving, and organisational skills, supported by a background in agricultural investments. He contributes to the team by providing insights into supply and demand analytics and supporting logistics operations.
Dougal holds a Bachelor of Agricultural Science from the University of Adelaide and has hands-on experience in farming and logistics management. He joined Lachstock Consulting in 2024 as a Graduate and is completing a structured development program to deepen his knowledge of the grain industry.
ANTON NGUYEN
RESEARCH ANALYST & PROGRAMMER
Anton is a software engineer specialising in transforming databases into dynamic, event-driven architectures. With experience in software delivery and value stream management, he has built analytical tools across industries including investment banking, hedge funds, legal, telecommunications, and healthcare.
Anton holds a Bachelor of Computer Science from the University of Adelaide. As part of Lachstock’s research team, he works closely with Nick to streamline data workflows and enhance the efficiency of research operations.
JAMES BARBER
DATA SCIENTIST & PROGRAMMER
James combines expertise in software development, statistical modelling, and data analytics. He holds a Bachelor of Economics, a Bachelor of Computer Science, and a Master’s in Artificial Intelligence and Machine Learning from the University of Adelaide.
At Lachstock, James applies his skills in algorithm design and data structure analysis to streamline and enhance the efficiency of data management processes.
GEORGIE VAN BEEK
CHIEF OPERATING OFFICER
Georgie brings over 25 years of experience in customer service and operations, combining strong organisational skills with a hands-on, team-oriented approach. She ensures systems, processes, and reporting are accurate and efficient, driving performance across the business.
Georgie holds a Bachelor of Arts in Outdoor Education, a Certificate IV in Bookkeeping and Accounting, and is completing a Graduate Certificate in Sustainability (ESG) as a pathway to an MBA. Since joining Lachstock Consulting in 2017, she has progressed from Business Administrator to Chief Operating Officer, leading the development and implementation of streamlined workflows and intuitive business practices.
ELLA CARRACHER
BUSINESS ADMINISTRATOR
Ella supports Lachstock’s Central team by ensuring reports, contracts, and broker notes are accurate and up to date. With a keen eye for detail, she helps maintain seamless processes across the Wagga Wagga office.
Ella joined Lachstock Consulting in 2022 as a casual accounts assistant and moved into a permanent role in 2023. She works closely with Joe and Herb to implement efficient business practices within the Central team.
